SIMPLE VIAZI KARAI RECIPE |
Hi Foodies, hows your day so far. Today I will share with you this
recipe for preparing one of Mombasa's most celebrated street foods,
Viazi karai. They are almost the same as bharjia's though here you use
normal all purpose flour with a few local spices of your choice.
INGREDIENTS
10 medium sized potatoes
2 teaspoons finely shredded garlic
2 cups all purpose flour
1 cup of water
small bunch of dhania (Coriander)
salt and pepper to taste
Pinch of food colour
oil for frying.
INSTRUCTIONS - Wash the potatoes until the water runs clean then peel them. In a cooking pot put the water and potatoes then bring them to a boil. Be careful not to overcook. Once cooked let them cool before cutting into cubes.
- In a bowl mix the flour, garlic, food colour, salt, pepper and dhania then add the water a little at a time until you have a thick paste.
- In a frying pan pre-heat the cooking oil. Dip the potatoes in hot oil and fry till golden brown.
Serve with Kachumbari or nyama choma.
