Here is a recipe for Chicken Marsala that serves 4 people:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces sliced cremini mushrooms
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions:

  1. Place the chicken breasts between two pieces of plastic wrap and pound them with a rolling pin or a meat mallet until they are about 1/4 inch thick.
  2. In a shallow dish, mix together the flour, salt, and pepper. Dip the chicken breasts in the flour mixture, coating both sides evenly.
  3. In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken breasts and cook for about 2-3 minutes on each side, or until they are golden brown. Remove the chicken from the pan and set it aside.
  4. In the same pan, add the mushrooms, shallot, and garlic. Cook for about 5 minutes, or until the mushrooms are tender.
  5. Add the Marsala wine, chicken broth, thyme, and parsley to the pan. Bring the mixture to a boil, then reduce the heat to a simmer.
  6. Return the chicken to the pan and simmer for about 5-10 minutes, or until the chicken is cooked through and the sauce has thickened.
