White Bean & Veggie Salad
This meatless main-dish salad combines creamy, satisfying white beans and avocado. Try mixing it up with different seasonal vegetables. 

How does that song go? "Beans, beans, they're good for your heart"? Well...those lyrics get it right! Beans are packed with cholesterol-busting soluble fiber, but that's not their only benefit. Beans are high in protein, which makes them a heart-healthy replacement for some animal protein sources, such as meat. Ingredients

  • 2 cups mixed salad greens
  • ¾ cup veggies of your choice, such as chopped cucumbers and cherry tomatoes

  • ½ avocado, diced
  • 1 tablespoon red-wine vinegar
