These totally fudgy, gooey, 
decadent Gluten Free Blackberry Brownies are the ultimate chocolate fix.
 The rich, fudgy chocolate combined with bursts of sweet wild 
blackberries will have you coming back for more.  They’re so easy to 
make, and no mixer is needed – so get your apron on and let’s bake! 
September is one of my favourite 
months, it’s where summer meets autumn and the leaves start turning. 
And, of course, it’s when everything pumpkin spice starts appearing. I 
LOVE all things pumpkin spice, because I love fall spices – they’re so 
warm and inviting, comforting even. But, this post isn’t about the 
wonderful spices of autumn – it’s about the wonderful produce that comes
 along with September. My favourite being blackberries!

| Gluten Free Blackberry Brownies | 
Now, depending on where you live, 
blackberries may be more of an August thing for you – the warmer the 
climate, the earlier the blackberries come! Even here in the UK it 
varies, blackberries tend to ripen a couple weeks earlier in London than
 the ‘burbs where my mum lives (about 15-20 miles out of London) because
 it’s a degree or two warmer in the city. But, wherever you are in the 
UK, you can be sure you’ll find plenty of blackberries growing wildly. I
 make it a rule to never buy blackberries unless it’s an emergency 
(anybody else have berry emergencies?!) because they’re so freely 
available to pick to your heart’s content around here. I pick so many in
 the first couple weeks of September, my freezer is stocked full! I did 
consider buying a punnet of blackberries from Tesco for these Blackberry
 Brownies, just for the photos since they’re a lot bigger – but in the 
end I decided it was a waste of money and I quite like the cute little 
wild berries – don’t you?
These Blackberry Brownies are just one
 of the many ways I have put all the blackberries I picked to use – I 
have a few other amazing recipes to share with you over the coming weeks
 so make sure to save some of your blackberries for those! But for 
today, it’s all about these amazing Blackberry Brownies! Honestly, 
they’re so fudgy and gooey – totally irresistible. The sweet little 
blackberries dotted throughout really take them to the next level of 
deliciousness. I underbake my brownies slightly, although I don’t like 
to say “underbaked” because to me they’re perfectly baked – what I mean 
is I take them out of the oven before they’re fully set – so they’re 
gooey, fudgy perfection when cooled. So perfectly underbaked is when a 
skewer comes out with wet crumbs on, but not raw batter.

Another amazing thing about these 
Blackberry Brownies is they are so easy to make. I use my trusted 
brownie base (if it ain’t broke, right) and add a tonne of sweet, 
freshly picked blackberries to the mix. You don’t even need a mixer, 
just a good old fashioned mixing bowl and wooden spoon. They are, of 
course, gluten free too. I use Dove’s Farm’s Gluten Free flour blend
 which I love, but your favourite 1-for-1 gluten free flour blend will 
work too! And if gluten isn’t a problem for you, just sub in regular 
plain/all purpose flour – Blackberry Brownies made easy for all, that’s 
my kind of baking! These beauties also have some Crème de mûre 
(blackberry liqueur) in, but you can just omit that if you don’t have 
any or want to keep them booze free. However, one of my amazing 
blackberry recipes I have coming up for you is for Crème de mûre so 
keep an eye out for that, and I’ll link here when it’s live! 
I took these seriously addictive 
Blackberry Brownies to work and they went down very well. I mean, you 
really can’t go wrong with these Blackberry Brownies – they’re fudgy, 
gooey, packed full of chocolate, have the perfect crinkle top! And 
blackberries combined with chocolate are just a match made in heaven – I
 love the sweet and slightly bitter combo of berries with chocolate, 
don’t you? Honestly, I could talk about how yummy these Gluten Free 
Blackberry Brownies are for days, but I think I should just let the 
recipe do the talking – let’s get baking!

Gluten Free Blackberry Brownies

Fudgy, gooey 
and oh so delicious - these  easy Gluten Free Blackberry Brownies are 
the perfect combination of rich chocolate brownie and sweet 
blackberries.
Ingredients
- 1 cup (225g) unsalted butter
- 1/2 cup (100g) sugar
- 7 oz (200g) dark chocolate
- 1 cup (100g) cocoa powder
- 1.5 cups (225g) gluten free all purpose/plain flour blend (or regular AP/plain flour if gluten isn't a problem)
- 1 tsp xanthan gum (omit if your GF flour blend already has xantham gum or you're using regular gluten flour)
- 1/2 tsp salt
- 1 tsp lemon zest
- 1 tsp baking powder
- 1 1/4 cup packed (250g) light brown sugar
- 4 large eggs
- 1/2 tsp vanilla extract
- 3 tbsp brewed coffee*
- 3 tbsp créme de mûre (blackberry liqueur) (optional)
- 3/4 cup (100g) semi-sweet chocolate chips
- 2 cups (250g) blackberries (washed and de-stemmed)
Instructions
- Preheat the oven to 350F/180C. Line a 9x13" brownie pan with greaseproof paper - leaving overhang at each end (this is for easy brownie removal)
- Put the butter, sugar and dark chocolate in a heat proof bowl and microwave in 30 second intervals, until all melted. Leave aside to cool slightly.
- Sift cocoa into a medium bowl, add flour, xanthan gum, salt, lemon zest and baking powder. Whisk to combine and remove any lumps. Set aside
- In another large mixing bowl beat the brown sugar, eggs and vanilla with a wooden spoon until combined. Stir in the coffee and créme de mûre if using. Beat in the melted chocolate mixture.
- Add the flour, and gently beat with wooden spoon until combined.
- Stir in the chocolate chips. Then gently stir in the blackberries.
- Pour into your prepared brownie pan and use the back of the spoon to spread out
- Bake for 40 minutes, or until a skewer comes out with wet crumbs but not raw batter.
- Cool in the tin, then remove and cut into squares
- I recommend cooling completely before cutting but they're great eaten warm with some vanilla ice cream, warm up in the microwave for 20 seconds to enjoy this way!

*You
 cannot taste the coffee, it just intensifies the chocolate flavour. You
 can omit if you really must, but I strongly advise against it
